Looking for the ultimate summer appetizer? This Grilled Brie with Peach Salsa brings together creamy, melty brie with a fresh, sweet-tangy peach and strawberry salsa. Finished with a drizzle of balsamic and infused olive oil, it's light, flavorful, and guaranteed to disappear fast at any gathering. Peach Salsa:
- 1 cup strawberries, diced
- 1 cup peaches, diced
- 2 Tbsp basil leaves, chiffonade
- 1 Tbsp mint leaves, chiffonade
- 2 tsp French Toast Sugar Shaker
- 1 Tbsp Summer Peach White Barrel Aged Balsamic, plus more for garnishing
- 2 Tbsp Basil Genovese Infused Olive Oil, divided (Substitute with Garlic, Tuscan Herb or plain Extra Virgin Olive Oil with Fresh Basil if Basil Genovese is unavailable)
Brie:
- 1 wheel Brie Cheese
- 1 Tbsp Basil Genovese Infused Olive Oil (for brushing)
To Serve:
- Pita Chips, sliced baguette or crackers

Make the Salsa: In a medium bowl combine strawberries, peaches, basil, mint, 2 tsp French Toast Sugar Shaker, 1 Tbsp Summer Peach White Barrel Aged Balsamic, and 1 Tbsp Basil Genovese Infused Olive Oil. Toss gently and set aside to let the flavors meld.

Prepare the grill: Preheat grill to 350F

Grill the brie: Brush the wheel of Brie Cheese with the remaining 1 Tbsp of Olive Oil. Grill for 3 - 5 minutes per side, until grill marks appear and the cheese is warmed through and melty inside.

Assemble & Serve: Transfer the grilled brie to a serving plate. Spoon the peach salsa over the top and drizzle with a little extra Summer Peach Balsamic. Serve immediately with pita chips, bread, or crackers.
TIP: If you don't have a grill handy, you can bake brie in the oven at 350F for about 10-12 minutes instead.
