This Everyday Salad with Lemon Poppyseed Dressing is the ultimate quick and satisfying meal, packed with vibrant flavors that are perfect for lunch or dinner. Ingredients:
For the Chicken
- 2 chicken breasts, cubed into 3/4" pieces
- 3 Tbsp Sicilian Lemon Infused Olive Oil
- 2 Tbsp Barrel Aged White Thick Sweet Balsamic (see substitution notes at the end)
- 1 Tbsp Butcher's Spice Blend
For the Dressing
- 1 cup greek yogurt
- 1/3 cup mayonnaise
- 1 1/2 Tbsp sugar
- 2 Tbsp Barrel Aged White Thick Sweet Balsamic
- 1 Tbsp Sicilian Lemon Infused Olive Oil
- 1/2 tsp Butcher's Spice Blend
- 1 lemon, zested and juiced
- 2 Tbsp poppy seeds
For the Salad
- 4 cups mixed salad greens
- 1/2 cucumber, halved and sliced
- 1 cup strawberries, sliced
- 1/2 cup feta, crumbled
- 1/3 cup pistachios, chopped
Directions:

Place cubed chicken in a bowl and toss with 3 Tbsp Sicilian Lemon Infused Olive Oil, 2 Tbsp Barrel Aged White Thick Sweet Balsamic, and 1 Tbsp Butcher’s Spice Blend. Cover and marinate in the refrigerator for at least 30 minutes, or up to 6 hours.

Meanwhile, in a small bowl or mason jar, combine the ingredients for the Creamy Poppy Seed Dressing and mix until well combined. Refrigerate until ready to use.

Cook the chicken. Heat a sauté pan over medium-high heat. Add the marinated chicken and cook for about 8 minutes, or until golden and cooked through (no longer pink in the center).

Assemble your salad by layering the mixed greens, cucumbers, strawberries, feta, and pistachios. Top with warm chicken and drizzle with the creamy poppy seed dressing. Enjoy!
