This Sweet & Spicy Chicken Stir Fry checks all the boxes: juicy chicken, crisp veggies, a sticky-sweet sauce with just enough heat, and that tropical pineapple twist that keeps everyone going back for “just one more bite.” Best part? It all comes together in one pan, which means less cleanup and more time to actually enjoy your evening.
Serve it over fluffy jasmine rice and boom—dinner is done, the family’s happy, and you didn’t have to overthink a thing.
🛒 Ingredients
For the Stir Fry

4 boneless, skinless chicken thighs, cut into strips

1 tbsp Chipotle Lime Rub & Seasoning

1½ tsp Chili Verde Flake Sea Salt, divided

1 red bell pepper, julienned
-
1 orange bell pepper, julienned

½ large yellow onion, julienned
-
1 cup snap peas, ends trimmed

28 oz canned pineapple, drained (reserve juice for sauce)

¼ cup green onions, sliced
-
1 tbsp sesame seeds, for finishing

Jasmine rice, for serving
For the Sauce

1 tbsp water
-
1 tbsp cornstarch
-
2 tbsp soy sauce
-
½ cup reserved pineapple juice
-
1 tsp Chipotle Lime Rub & Seasoning
-
½ tsp Chili Verde Flake Sea Salt
🍳 Directions
1️⃣ Cook the Chicken
Heat a wok or large skillet over medium-high heat. Add Green Chile Infused Olive Oil.
Once shimmering, add chicken strips and season with Chipotle Lime Rub and 1 tsp Chili Verde Flake Sea Salt. Cook for 6–8 minutes, until chicken is cooked through and lightly browned.
2️⃣ Mix the Sauce
In a bowl, whisk together water and cornstarch until smooth. Add soy sauce, pineapple habanero balsamic, pineapple juice, Chipotle Lime Rub, and Chili Verde Sea Salt. Stir well and set aside.
3️⃣ Stir Fry the Veggies
Add bell peppers, onion, snap peas, and the prepared sauce to the wok. Cook, stirring occasionally, for 6–7 minutes until the sauce thickens and coats everything beautifully.
When the stir fry is 1–2 minutes from done, stir in the pineapple.
4️⃣ Finish & Serve
Remove from heat and top with green onions and sesame seeds.
Serve hot over jasmine rice and enjoy immediately.
