Cool off with this vibrant Watermelon Basil Margarita, made with fresh watermelon juice, zesty lime, and smooth tequila, plus a homemade basil simple syrup for a unique twist. Rimmed with Lime Fresco Infused Sea Salt and Dark Barrel Aged Balsamic, this cocktail bursts with flavor and is garnished with fresh basil and lime. The perfect refreshing treat for any summer occasion!

Basil Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 Tbsp Barrel Aged Dark Thick Sweet Balsamic

Margarita:

  • 1 personal sized seedless watermelon (makes about 2 cups watermelon juice)
  • 4 ounce fresh lime juice
  • 6 ounce tequila
  • 4 ounce Basil Simple Syrup
  • 1/4 cup fresh basil, chiffonade
  • Barrel Aged Dark Thick Sweet Balsamic, for rimming
  • Lime Fresco Infused Sea Salt, for rimming
  • ice, fresh basil, lime wedge, for garnishing

Directions:

  1. In a small saucepan over medium-high heat, combine the water, sugar and Barrel Aged Dark Thick Sweet Balsamic to make the basil simple syrup. Stir and cook until the sugar is fully dissolved, about 5 minutes. Remove from heat and let it cool completely.

  2. To make fresh watermelon juice, dice a personal-sized seedless watermelon and blend until smooth. Strain the mixture through a fine mesh strainer, using a spatula to aid in draining the juice. Set aside.

  3. In a pitcher, combine the freshly prepared watermelon juice, lime juice, tequila, basil simple syrup, and chiffonaded basil. Stir the ingredients until they are thoroughly combined.

  4. Prepare the glass rims by pouring Barrel Aged Dark Thick Sweet Balsamic onto one small plate and Lime Fresco Sea Salt onto another. Dip the rim of each glass first into the balsamic, then into the salt.

  5. Serve the margaritas over ice and garnish each glass with a sprig of basil and a lime wedge.
