Ingredients

  • 1 pasta rock
  • 1 pound trofie pasta
  • 2 tablespoons Caramelized Garlic Infused Olive Oil
  • ½ onion, finely minced, approximately ¼ cup
  • 1 tablespoon Sweet Smoked Chili Rub & Seasoning
  • 1 can diced tomatoes, 28 ounces
  • ½ teaspoon Roasted Garlic Infused Sea Salt, plus more to taste
  • ⅓ cup vodka
  • ½ cup heavy cream
  • Fresh parsley, chopped, for garnish
  • Grated Pecorino Romano or Parmesan cheese, for serving

Directions

1. Cook the Pasta

Bring a large pot of water to a boil.

Once boiling, add the pasta rock and allow it to season the water for approximately 2 minutes. Carefully remove the pasta rock.

Add the trofie pasta and cook until just shy of al dente, approximately 2 minutes less than the package directions.

Before draining, reserve about ½ cup of the pasta water. Drain the pasta and set it aside.

2. Sauté the Onion

While the pasta cooks, heat the Caramelized Garlic Infused Olive Oil in a large saucepan over medium heat.

Add the minced onion and cook for approximately 3 minutes, stirring occasionally, until softened and translucent.

3. Bloom the Seasoning

Add the Sweet Smoked Chili Rub & Seasoning.

Cook for approximately 30 seconds, stirring constantly, until fragrant. Keep it moving so the spices do not scorch.

4. Build the Vodka Sauce

Stir in the diced tomatoes and ½ teaspoon of Roasted Garlic Infused Sea Salt.

Pour in the vodka and bring the mixture to a lively simmer over medium-high heat.

Cook for 8 to 10 minutes, stirring occasionally, until the sharp vodka aroma has mellowed and the sauce has reduced slightly.

Kitchen note: Simmering mellows the vodka flavor, but it does not necessarily remove every trace of alcohol.

5. Add the Cream

Reduce the heat to medium-low.

Stir in the heavy cream and cook for approximately 1 minute, just until the sauce is hot, smooth, and evenly combined.

Avoid boiling the sauce aggressively after adding the cream.

6. Finish the Pasta

Add the cooked pasta directly to the sauce.

Toss over medium heat for 1 to 2 minutes, allowing the pasta to absorb some of the sauce.

Add a splash of the reserved pasta water if the sauce becomes thicker than you prefer.

Stir in the chopped parsley and taste. Add more Roasted Garlic Sea Salt as needed.

7. Serve

Divide the pasta among serving bowls.

Finish with grated Pecorino Romano or Parmesan cheese, extra parsley, and a light drizzle of Caramelized Garlic Olive Oil.

Serve immediately while the sauce is silky and the cheese is still plotting its magnificent melt.
