This rustic PizzaOlio Focaccia Bread is one of those recipes that feels impressive but is surprisingly easy to make. Rich olive oil, savory Mediterranean herbs, juicy cherry tomatoes, and salty feta create a bread that’s perfect for sharing.

Serve it warm with olive oil and balsamic for dipping, alongside pasta night, or slice it up for a show-stopping appetizer. However you serve it, this focaccia brings that cozy Mediterranean bakery vibe right into your kitchen.


Ingredients

Focaccia Bread

1 cup warm water
2 ¼ tsp active dry yeast
¼ tsp honey

2 ½ cups all purpose flour

¾ cup PizzaOlio Infused Olive Oil, divided

1 tsp Rosemary Infused Sea Salt

1 tbsp Mediterranean Rosemary Rub & Seasoning

1 cup cherry tomatoes, halved

½ cup feta cheese, crumbled


For Dipping (Optional but Highly Recommended)

Directions

  1. In a large bowl, combine warm water, yeast, and honey. Let the mixture sit for several minutes until the yeast blooms and becomes foamy.

  2. Add the flour, ¼ cup PizzaOlio Infused Olive Oil, and Rosemary Infused Sea Salt. Stir with a fork until the dough begins to form.

  3. Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and well combined.

  4. Pour 2 tablespoons PizzaOlio Infused Olive Oil into a clean bowl and roll the dough in the oil to coat. Cover with a towel or plastic wrap and allow it to rise for about 1 hour.

  5. Drizzle 2 tablespoons PizzaOlio Infused Olive Oil into the bottom of a cookie sheet or a 9 x 13 baking dish.

  6. Place the dough in the dish and gently stretch it to fit the pan. Use your fingertips to create the classic focaccia dimples across the surface.

  7. Pour the remaining olive oil over the dough and sprinkle with Mediterranean Rosemary Rub. Spread the oil and seasoning evenly across the top.

  8. Add cherry tomatoes and crumbled feta, gently pressing them into the dough.

  9. Preheat the oven to 450°F.

  10. Bake for 15–20 minutes or until the focaccia is golden brown and cooked through.
