A Weeknight Dinner That Feels Like a Win

Juicy chicken breasts are stuffed with colorful veggies, melty mozzarella, and drizzled with Olivelle's Caramelized Garlic Olive Oil for next-level flavor. Every bite is bright, garlicky, and downright delicious.
It looks fancy (your family will swear you spent hours), but this recipe is simple enough for a Tuesday night and impressive enough for guests.
Ingredients:
- 4 chicken breasts
- 2 1/2 tsps Black Garlic Infused Sea Salt, divided
- 2 tsp freshly ground black pepper
- 1 zucchini
- 1 yellow squash
- 3 tomatoes
- 1 red onion
- mozzarella, sliced
- 1/4 cup Caramelized Garlic Infused Olive Oil
- 2 tbsp Barrel Aged Dark Thick Sweet Balsamic Vinegar
- 2 tbsp Wild Garlic Dried Herb Blend
- chopped parlsey, to finish
Directions:

Preheat the oven to 375F.

Prep the chicken: cut 5-6 slits across the top of each chicken breast (hasselback-style), about ¾ of the way through (don’t cut all the way down).

Season: Rub each chicken breast with ½ tsp Black Garlic Infused Sea Salt and pepper, making sure to season inside the slits. Set aside.

Slice the veggies: Use a sharp knife or mandaline to thinly slice the zucchini, yellow squash, tomatoes, and onion.

Stuff it: In each slit, alternate stuffing with slices of zucchini, squash, tomato, onion, and mozzarella. Place the stuffed chicken breasts on a greased or parchment-lined baking sheet.

Mix the drizzle: In a small bowl, whisk together Caramelized Garlic Infused Olive oil, Barrel Aged Dark Thick Sweet Balsamic, Wild Garlic Dried Herb Blend, and remaining ½ tsp Black Garlic Infused Sea Salt. Pour mixture all over the chicken.

Bake: Roast for 35-45 minutes, until the chicken is cooked through and no longer pink in the center.
- Finish: Sprinkle with chopped parsley, take a bow, and dig in.
