For the Shrimp Bowls:

1 cup cooked brown rice

1 red bell pepper, diced

¼ small red cabbage, cored and chopped

1 small avocado, sliced

¼ cup fresh cilantro, chopped

For the Zesty Basil Dressing:

1 cup fresh basil, lightly packed

1 cup Greek yogurt

1 Tbsp Barrel Aged Dark Thick Sweet Balsamic

Mojo Citrus Seasoning Salt, to taste

Juice and zest of 1 small lime

Marinate the shrimp:
In a bowl, combine shrimp with Barrel Aged Dark Thick Sweet Balsamic, Key Lime Infused Olive Oil, Sweet Smoked Chili Rub, and Mojo Citrus Seasoning Salt.
Toss to coat and let marinate for 10 minutes. -
Make the zesty dressing:
Add basil, Greek yogurt, Barrel Aged Dark Thick Sweet Balsamic, Mojo Citrus Seasoning Salt, and lime juice and zest to a bowl or food processor.
Blend until smooth and creamy. Set aside. -
Cook the shrimp:
Heat a skillet over medium heat with a drizzle of Key Lime Infused Olive Oil.
Add shrimp and cook 2–3 minutes per side, until opaque and just cooked through. Remove from heat. -
Assemble the bowls:
Divide cooked brown rice between two bowls.
Top with red bell pepper, red cabbage, avocado, and cilantro. -
