Watermelon Berry Salad

Summer in a Bowl πŸ‰β˜€οΈ

This Watermelon Berry Salad tastes like barefoot afternoons, patio laughter, and somebody insisting you β€œhave just one more scoop” while balancing a paper plate at a backyard BBQ.

Sweet watermelon, juicy berries, fresh mint, and a bright citrusy dressing come together in a ridiculously refreshing salad that somehow manages to feel both light and indulgent at the same time. Then comes the finishing touch: coconut and chia seeds for a little texture surprise that makes people pause mid-bite and ask what you put in this magical fruit bowl.

The Blood Orange Olive Oil and Barrel Aged White Balsamic bring a fresh, vibrant flavor that takes this way beyond the sad grocery store fruit tray territory. This is fruit salad with personality. ✨

Ingredients

For the Dressing

  • 1/4 cup Barrel Aged White Balsamic
  • 3 tbsp Blood Orange Infused Olive Oil
  • 1 tbsp Lemon Raspberry Sugar Shaker
  • 1 tsp Vanilla Bean Infused Sea Salt

For the Salad

  • 4 cups watermelon, cut into 1-inch cubes
  • 1 cup blueberries
  • 1 cup strawberries, sliced
  • 1/4 cup shredded coconut
  • 3 tbsp chia seeds
  • 2 tbsp fresh mint, chopped

Directions

  1. In a small bowl or jar, whisk together the Barrel Aged White Balsamic, Blood Orange Infused Olive Oil, Lemon Raspberry Sugar Shaker, and Vanilla Bean Infused Sea Salt until smooth and well combined.
  2. In a large mixing bowl, combine the watermelon, blueberries, and sliced strawberries.
  3. Pour the dressing over the fruit and gently toss until evenly coated.
  4. Let the salad sit for about 30 minutes in the refrigerator so the flavors can mingle and get all summery together.
  5. Just before serving, sprinkle with shredded coconut, chia seeds, and fresh mint.
  6. Serve chilled and prepare for someone to immediately ask for the recipe before they’ve even finished chewing. 😏

Tips & Swaps

  • Add feta cheese for a sweet-and-salty twist.
  • Fresh basil also works beautifully in place of mint.
  • Want extra citrus flavor? Add a little fresh lime zest.
  • Best served cold straight from the fridge on hot summer days.
  • Perfect for BBQs, brunches, lake weekends, and β€œI volunteered to bring a side dish but didn’t want to cook” situations.
