Sweet watermelon, juicy berries, fresh mint, and a bright citrusy dressing come together in a ridiculously refreshing salad that somehow manages to feel both light and indulgent at the same time. Ingredients
For the Dressing
- 1/4 cup Barrel Aged White Balsamic
- 3 tbsp Blood Orange Infused Olive Oil
- 1 tbsp Lemon Raspberry Sugar Shaker
- 1 tsp Vanilla Bean Infused Sea Salt
For the Salad
- 4 cups watermelon, cut into 1-inch cubes
- 1 cup blueberries
- 1 cup strawberries, sliced
- 1/4 cup shredded coconut
- 3 tbsp chia seeds
- 2 tbsp fresh mint, chopped
Directions
- In a small bowl or jar, whisk together the Barrel Aged White Balsamic, Blood Orange Infused Olive Oil, Lemon Raspberry Sugar Shaker, and Vanilla Bean Infused Sea Salt until smooth and well combined.
- In a large mixing bowl, combine the watermelon, blueberries, and sliced strawberries.
- Pour the dressing over the fruit and gently toss until evenly coated.
- Let the salad sit for about 30 minutes in the refrigerator so the flavors can mingle and get all summery together.
- Just before serving, sprinkle with shredded coconut, chia seeds, and fresh mint.
- Serve chilled and prepare for someone to immediately ask for the recipe before theyβve even finished chewing. π
