Ingredients

1 pasta rock (optional)

1 package long shaped pasta such as truffle tagliolini or bucatini

1 teaspoon Maple-Wood Smoked Bacon Infused Olive Oil

1 cup leeks, thinly sliced

2 cloves garlic

3.5 oz artichoke hearts

1 cup packed spinach

2 green onions

12 basil leaves

1 cup canned coconut milk

2 teaspoons nutritional yeast

½ teaspoon Black Truffle Infused Sea Salt

1 tablespoon Roasted Garlic White Barrel Aged Balsamic


Directions

  1. Bring 4 quarts of water to a rolling boil. Season with a pasta rock or about 1 tablespoon kosher salt.

  2. Add the pasta and cook according to package directions until al dente.

  3. Meanwhile, heat Maple-Wood Smoked Bacon Infused Olive Oil in a large saucepan over medium heat.

  4. Add the sliced leeks and sauté until softened, about 4 minutes.

  5. Stir in the garlic and cook for another minute until fragrant.

  6. Transfer the sautéed leeks and garlic to a blender.

  7. Add the artichoke hearts, spinach, green onions, basil leaves, coconut milk, nutritional yeast, and Black Truffle Infused Sea Salt.

  8. Blend until the sauce becomes completely smooth and creamy.

  9. Pour the sauce back into the saucepan and warm over medium heat.

  10. Add the cooked pasta and toss to coat the noodles evenly.

  11. Drizzle in the Roasted Garlic White Barrel Aged Balsamic and toss again.
